What would constitute a baked asparagus recipe? I am inclined to think of cakes and pies when the word baking is used! So I looked it up...Our dictionary tells us that baking is "cooking food by dry heat as in an oven". It also tells us that roasting is "cooking food by dry heat as in an oven"!

So what is the difference between baked and roasted asparagus? Nothing really.

As a result we will share the recipes our between pages for roast and baked asparagus and link between them then you will have a wider choice of recipes and everyone will be able to find them, we hope!

Pepper and Asparagus bake

An easy way to combine two healthy foods with a great contrast of colors to add to the appeal.

ASparagus & Sweet Pepper bake ready to cook

INGREDIENTS

Eight asparagus spears, washed and trimmed, or more if required

Two sweet red pointed peppers washed, seeds and core removed and sliced along their length

One yellow pepper prepared as per the red pepper

Italian herb seasoning

Salt and pepper to taste

Olive oil

Cooking Time:  30 mins  
Prep Time:      10 mins
Serves:              4

If you wish, sliced garlic cloves can be added as a variation

You can use any colour of peppers but using  a mix of red /yellow / orange gives a nice contrast to the greeen of the asparagus and makes for a good looking colourful dish. 

Directions

  1. Preheat oven to 350°F, 335F for fan ovens
  2. Place the asparagus in a shallow ovenproof dish – see photos for the best ideas, choice of dish adds to the presentation!
  3. Arrange the red pepper on either side of the asparagus spears.
  4. Follow up with the yellow pepper, so that you get a nice contrast in colors.
  5. Salt and pepper to taste.
  6. Drizzle olive oil over the asparagus and pepper.
  7. Sprinkle Italian herb seasoning over all the vegetables, to taste.
  8. Place in the oven for 20 to 30 min.
  9. When cooked to taste remove from the oven and serve

Smoked Scottish Mackerel and Asparagus Bake

A great wee fish dish combined with the color and flavor of asparagus.

Mackeral & Asparagus Bake

Mackerel caught and eaten the same day tastes amazing.

This is a super quick and easy dish to make. You can't go wrong!

Cooking Time:  11 mins  
Prep Time:         3 mins
Serves:               2-3

INGREDIENTS

Four to six smoked Scottish mackerel fillets

eight asparagus spears, washed and trimmed, or more if required

Salt and pepper to taste

Olive oil

Directions

  1. Part precook the asparagus spears in microwave oven
  2. Preheat oven to 350°F, 330F for fan ovens
  3. Place the smoked Scottish mackerel fillets in a shallow ovenproof dish – see photos for the best ideas, choice of dish adds to the presentation!
  4. Arrange the precooked asparagus spears around and over the mackerel.
  5. Add a little salt and pepper to taste. Salt and pepper to taste.
  6. Drizzle a little olive oil over the asparagus and fish; mackerel is a naturally oily fish anyway.
  7. Place in the oven for 9 to 10 min.
  8. When cooked to taste remove from the oven and serve

The asparagus can be roasted on its own and the smoked mackerel can be served cold

A great starter or an add on as a main course
