Soups with Dehydrated Asparagus

Asparagus dries (dehydrates) very nicely. Each year I buy about 10 batches from the Farmers Market and dry about half of them by simply cutting them into 1 inch length and sticking them in the dehydrator for a day. Store it for adding to all of your wintertime soups and stews.
I make up large batches of rich soups, chili, spaghetti sauce, etc. into which I toss a handful of this wonderful dried asparagus. It is almost as good as fresh picked.

Springtime Wonder

During the short season when fresh asparagus is being harvested is a wonderful time for putting it raw or fresh into everything. Anyplace where you might normally use celery or bell pepper is a good place for asparagus. Chopping fresh asparagus is easily accomplished. Simply keep it in its original bundle as purchased and cut from the bottom end using a sharp knife and cutting board.
Use it chopped in all potato, egg, or green salads. It is a great addition to fried potatoes and onions, or used in frittatas.
For a popular covered dish meal prepare it whole with salt, pepper and olive oil or butter. Spread it over a flat pan and bake it in a medium hot oven for about ten minutes. The same dish can be more easily cooked in the microwave in the covered dish and cooked on the fresh vegetable setting. The oven method, however, seems to be the most popular with guests.
Our own imagination is the only limit to the creative uses of this springtime wonder.

Its great to hear from you and your use of dried asparagus. We think drying is an underestimated and underused method of storage. As you say it's a great way to make very tasty soups and also makes a good addition to casseroles.
