Salmon and Asparagus

We've always loved the combination of salmon and asparagus. For a nice simple classic meal you can't go far wrong with a salmon steak and steamed asparagus with butter and new potatoes. If it happens to all be in season and really fresh even better.

However there are also lots of very tasty recipes combining these two ingredients and we ate one last night which inspired me to write it up here for you to give a try.

so here it is:

Salmon and Asparagus in filo pastry

I'm sorry I failed to take a photo but I will next time we cook it.

The recipe is very simple, cooking the salmon in the pastry parcel keeps it beautifully moist.


4 medium sized salmon steaks

4 sheets filo pastry

6 thick or 12 thin asparagus spears

about 12 mid sized button mushrooms

Olive oil


  1. pre-heat the oven to 200C
  2. If the spears are thick slice them lengthways
  3. Chop the mushrooms into small slices and cut the asparagus spears into 2 inch lengths
  4. Heat a little olive oil in a frying pan and toss the mushrooms and asparagus in the oil for minute or two until golden and just turning tender
  5. Open out the first sheet of filo pastry, place the first salmon steak on the pastry and lay some asparagus and mushroom mix along its length
  6. Roll the filo pastry over the salmon, fold the ends over towards the middle then roll up all the way. Leave the parcel lying on the end of the pastry to keep it in place
  7. Repeat this process for each steak and place all three parcels on a baking
    tray.Place in the oven straight away and cook for 20 to 25 minutes. I turned mine half way through and they came out very nicely cooked.
  8. Serve with new potatoes and your choice of fresh vegetables
